- Orecchiette with turnip greens – Traditional Apulian pasta with turnip sauce (if turnip greens are not available dish is made with Broccoli)
- Mezzelune refilled pasta with tomato and basil sauce – Refilled pasta with ricotta & cheese filling and tomato and basil sauce
- Ravioli spinach & ricotta – Refilled pasta with spinach and ricotta filling and butter, sage & Parmigiano cheese sauce
- Tagliatelle with False Tuscan Ragù – Fresh egg pasta with vegetables and tomato sauce
- Gnocchi alla Sorrentina – Potato gnocchi with tomato, basil & garlic sauce and Parmigiano cheese & mozzarella
- Gnocchi alla boia – Potato gnocchi with cream, clams & peperoncino sauce
- “Gnocchi” sardi with Gorgonzola – Traditional Sardinian pasta with Gorgonzola cheese cream sauce (this is a pasta type, not potato gnocchi)
